The cooler climate holds onto acidity for longer, which suits whites well. Chardonnay and Riesling are the two you'll see most, with Pinot Gris and Sauvignon Blanc turning up here and there too, depending on the region.

Pipers River's climate has often been compared to Champagne, and it's part of why the sparkling made there has a real following. The same cool, slow conditions that make some varieties harder to grow are what sparkling needs to develop properly.
