Havilah is the playful, experimental side of Tamar Valley winemaker Ricky Evans, best known for his Two Tonne Tasmania label. Launched in 2019 alongside an "urban cellar door" wine bar of the same name in Launceston, Havilah gives Ricky a space to work with fruit and techniques that don't quite fit the Two Tonne mould, think skin contact whites, pét-nat, and blends that shift with whatever the season throws at him. It's proof that even Tasmania's most focused winemakers need somewhere to let their hair down, and the results are consistently some of the most interesting, drink-now wines coming out of the state.

Every region in Tasmania grows something a little differently. Sourced from a tiny parcel in Two Tonne Tasmania's Waverley Vineyard, this Gewürztraminer is a wine of real site specificity. Wild fermented and aged on lees, it captures the lively essence of its unique origin. Refreshing acidity and bright aromatics that speak directly to the place it came from.
