Cabernet Sauvignon
Tasmanian Cabernet Sauvignon isn't trying to compete with the blockbuster styles that come out of warmer regions, and that's exactly the point. What you get instead is real elegance, blackcurrant, cassis, cedar and fine, gravelly tannins, in wines built on precision and structure rather than power. A genuinely rare find from the island, and one worth the patience it asks of you.

Evenfall's Cabernet Sauvignonis a striking wine. Deep crimson in the glass, with a complex bouquet of blackberry, black cherry, blackcurrant pastille, liquorice, cedar, tobacco, and clove. Subtle layers of ginger, black olive, dried herbs, and tea leaves add depth, while fine gravelly tannins carry the palate to a lingering finish of cassis and kirsch. A wine of genuine elegance and refinement from one of the Tamar Valley's most exciting producers. Pair with slow-roasted lamb, venison, or aged hard cheese. Drink now through 2032.
Holm Oak's Tamar Valley Cabernet Sauvignon is a wine of classic structure and cool climate elegance. Blackcurrant and cassis on the nose, with a velvety mouthfeel and hints of chocolate, leather, and tobacco from French oak maturation. Drinking wonderfully now, but built to develop gracefully over the next 6–10 years. A Cabernet worth putting away. Pair with slow-roasted lamb, beef short rib, or aged hard cheese. Drink now through 2033.
The Roter Satz is Utzinger doing what Utzinger does best, taking West Tamar fruit seriously and getting out of its way.
A blend of Syrah, Cabernet Franc, Cabernet Sauvignon, Merlot, and Pinot Noir, all hand-picked and fully destemmed before a wild ferment and extended time on skins. Basket pressed into a mix of old and new French oak, then left unfined and unfiltered. The result is a wine that’s honest about what it is and where it comes from.
Dark crimson in the glass, with blackcurrant, cooked plum, sour cherry, vanilla, and white pepper on the nose. The palate is full-bodied with real volume and a soft attack giving way to a generous mid-palate and a long, structured finish underpinned by firm young tannins. It’s drinking well now, but give it a few years in bottle and it’ll show you something else entirely.
