Holm Oak's Tamar Valley Cabernet Sauvignon is a wine of classic structure and cool climate elegance. Blackcurrant and cassis on the nose, with a velvety mouthfeel and hints of chocolate, leather, and tobacco from French oak maturation. Drinking wonderfully now, but built to develop gracefully over the next 6–10 years. A Cabernet worth putting away. Pair with slow-roasted lamb, beef short rib, or aged hard cheese. A blend of Syrah, Cabernet Franc, Cabernet Sauvignon, Merlot, and Pinot Noir, all hand-picked and fully destemmed before a wild ferment and extended time on skins. Basket pressed into a mix of old and new French oak, then left unfined and unfiltered. The result is a wine that’s honest about what it is and where it comes from.

Dark crimson in the glass, with blackcurrant, cooked plum, sour cherry, vanilla, and white pepper on the nose. The palate is full-bodied with real volume and a soft attack giving way to a generous mid-palate and a long, structured finish underpinned by firm young tannins. It’s drinking well now, but give it a few years in bottle and it’ll show you something else entirely.
