The NV Dr Edge 'Extra Brut' Rosé is a hand-crafted traditional-method sparkling from Tasmania's Tamar Valley, made from Pinot Noir and Pinot Meunier. It spent two years on lees before disgorgement in October 2025, giving a dry, vibrant rosé with wild strawberry and red cherry fruit, fine bubbles, and a creamy, savoury finish. Drink it now or cellar it for up to five years.

Made entirely by hand from a single Tamar Valley vineyard, the 2020 P.J. Dredge Blanc de Noirs is a vintage traditional-method sparkling from Tasmania's Dr Edge. Pinot Noir with a touch of Pinot Meunier spent five years on lees before being disgorged as Brut Nature, with no dosage. The result is bone-dry yet textural, with red apple and pear, brioche and toasted nut, bright acidity and a long, saline finish. Huon Hooke awarded it 96 points, calling it "a superb wine of lip-smacking dryness and energy."

Dr Edge doesn't do things the conventional way and that's exactly the point. A bold blend of 70% Derwent Valley and 30% Tamar Valley fruit, this wine goes through whole cluster inclusion, hand stomp, foot stomp, and even bum stomp to extract maximum flavour. Wild yeast fermentation, nine months in old oak, bottled unfiltered and unfined. The result is a pure, unadulterated expression of Tasmanian terroir with vibrant fruit, refined structure, and genuine wild character. Pair with game, charcuterie, or anything off the grill.
