The WildState Range
Sinapius sits above the banks of Pipers Brook, a family vineyard purchased by Linda Morice and her late husband Vaughn Dell in 2005. Vaughn's meticulous approach to clonal selection and high-density planting shaped the vineyard's distinctive character, and after his sudden passing in 2020, Linda has carried the vision forward with quiet determination. Sinapius grows a genuinely broad range for such a small site, Pinot Noir, Chardonnay, Gamay, Grüner Veltliner and Ribolla Gialla, all naturally fermented with minimal intervention to let the site do the talking.
How to shop
Stick to One Corner of the Island
Every region in Tasmania grows something a little differently. Building a bundle around one region, say the Tamar Valley or the East Coast, is a way to really get to know a place, its soil, its climate, its particular way of making Pinot Noir or Riesling. It's less about variety and more about depth.
Get to Know a Variety Properly
Tasmania makes more than one style of Pinot Noir, more than one style of Riesling. Building a bundle around a single variety lets you taste how region, producer and approach can change the same grape into something completely different from bottle to bottle.
Follow One Winemaker's Range
Behind every label is a person making decisions, about the vineyard, the vintage, the style they're going for. Building a bundle around a single producer is a way to taste those decisions side by side and get a real sense of what makes their wine theirs.

Close planting forces vines to compete for resources, producing smaller berries with more concentrated flavour and Sinapius knows how to make the most of it. Ripe red plums and dark red berries sit at the core with subtle earth, and spice. Smooth tannins and lively acidity create a fresh, balanced finish that's both approachable and interesting. A quietly impressive wine from one of Pipers Brook's most thoughtful producers. Pair with salmon, duck, or mushroom dishes. Drink now through 2029.
A rare opportunity! The Sinapius 2019 Close Planted Chardonnay is a museum release of genuine distinction. Luminous pale straw with vibrant green undertones, the nose offers elegant creamy oak vanilla framing layers of citrus and grapefruit alongside refreshing briny minerality. Green grape and delicate white flower aromatics add refinement, while savoury oak spice and finely tuned Pipers acidity provide backbone and complexity. Caught beautifully between youthful vibrancy and graceful maturation. Limited stock — for patient collectors seeking rewarding medium term development. Pair with fresh crayfish, aged soft cheese, or pan-seared fish. Drink now through 2032.
Close planting concentrates flavour and Sinapius's 2023 Chardonnay is proof. White peach, nectarine, and grapefruit on the nose, with delicate crème fraîche and gentle spice. Subtle clover blossom, crushed shell, and grilled nuts add complexity, while a light touch of vanillin oak enhances the palate. Refreshing saline acidity and a finish of white peach, grapefruit, and lemon zest. Delicate, vivid, and beautifully balanced. Pair with fresh crayfish, scallops, or pan seared fish. Drink now through 2030.
Experience the beautiful balance of Sinapius Gruner Veltliner 2024. Delight your senses with white flowers and honey dew notes on the nose, followed by a palate of citrus, freshly cut green pear, and subtle spice and mineral notes. This wine boasts a creamy texture and a long finish, making it the perfect addition to any occasion.
Gamay is having a moment in Tasmania and Sinapius's Esme Rouge is a fine example of why. Fresh wild strawberry and redcurrants on the nose, with soft tannins and a hint of spice. Medium bodied and smooth, with bright acidity that makes it equally enjoyable at room temperature or lightly chilled. A wine for those who like their reds a little lighter and a lot more fun. Pair with charcuterie, roast chicken, or mushroom dishes. Drink now through 2027.
