$43.00

Pristine, crystalline dessert Riesling defined by pitch perfect purity. Crystalline acidity cuts through like frozen wild lemon and lime juice, the hallmark of a truly great sweet wine. At 139g/L residual sugar, the boiled lolly sweetness sits in exquisite balance, almost meeting the acidity at its midpoint. The finish is a superb, lingering persistence that seems to stretch endlessly across the palate. A masterclass in restraint and refinement.

Aroma

A huge nose of intense lime, apricot and honey.

Palette

A pristine, crystalline dessert Riesling with pitch-perfect purity. Acidity is what makes a sweet wine great, and here it comes through like frozen wild lemon and lime juice. The sweetness (139g/L residual sugar) has a boiled-lolly character and is balanced so that it almost, but not quite, meets the acidity in the middle. The persistence is superb, with a finish that seems to go on and on.sh.

Pairings

The sharp citrus acidity suits fruit desserts like pineapple tarte tatin or apple strudel, and strong blue cheeses such as Roquefort. It also works with foie gras, or on its own at the end of a meal.

Wine Making

Crafted using the traditional cane-cut method, the Riesling grapes are left to wither on the vine after severing, concentrating sugars and intensifying natural flavours. Carefully hand-picked, the fruit is gently bag-pressed, cold-settled, and fermented at cool temperatures using a neutral yeast to preserve the clarity and aromatic precision of the Riesling grape.

Fermentation is deliberately halted to retain its signature sweetness, followed by 6–8 weeks of lees ageing, adding subtle texture and complexity to the palate.

Expect vibrant notes of preserved lime, apricot, marmalade, and bergamot, layered with hints of brown sugar and rosewater. The palate is rich and unctuous yet finely balanced by piercing acidity, offering both indulgence and elegance in every sip.

Meet the owners

Pressing Matters began in 2002 when Greg Melick, a barrister and former Major General with a lifelong love of wine, and his wife Michelle planted a vineyard in the Coal River Valley inspired by the neighbouring Morningside property. First releases came in 2006, and the estate quickly built a reputation for Riesling and Pinot Noir grown over a rare seam of limestone that runs through the valley, adding real finesse and structure to the wines. In 2025 the Melicks sold their remaining stake to the Fogarty Wine Group, with winemaking now handled by Liam McElhinney, though the focus on Riesling and Pinot Noir from this distinctive site remains unchanged.

Coal River Valley

About the region

Tucked into the valleys surrounding the historic town of Richmond, the Coal River Valley is Tasmania's sunniest wine region. Low rainfall, abundant sunshine and cooling breezes off the Tasman Sea come together to create conditions that are about as close to perfect as it gets for grape growing. It shows in the wines: Chardonnay with real texture and depth, Pinot Noir with elegance and structure, Riesling with precision, and sparkling wines that hold their own against the best in the world.
