Pooley's Butcher's Hill Chardonnay is their single vineyard flagship. This 2023 Chardonnay is a wine of real distinction. Kaffir lime, citrus blossom, and fennel on the nose, with a generous palate of apricot, white peach, mandarin, beeswax, and a subtle hint of macadamia. Long and silky on the finish, supported by a strong, refreshing acidity. Very limited stock. Pair with fresh crayfish, scallops, or pan seared fish. Drink now through 2031.

Aroma

Intensely aromatic, with grapefruit, gardenia, mandarin, lime preserve, and lemon thyme.

Palette

Pure peach, nectarine and citrus fruits with hints of grilled nuts, crème fraîche, soft dreamy spices, vanilla bean, spiced oatmeal, crushed riverstone, struck flint and clover blossom. Very composed and harmonious with a crystalline clarity and assured flow on the palate, gracefully fading off with a stony, umami-rich presence on the finish

Pairs well with grilled seafood, creamy pasta, or soft cheeses, matching the wine's texture and richness.

Whole bunch pressed to tank, settled for 24 hours then racked to barrel for ferment, 40% new French Oak (Sirugue) for 11 months, 50% MLF

Meet the owners

Pooley Wines has been a Coal River Valley institution since 1985, when Denis and Margaret Pooley planted the first vines at Cooinda Vale. Three generations on, the family now farms two sites, Cooinda Vale and the heritage-listed Butcher's Hill at Richmond, and has built a reputation as one of the finest producers of Pinot Noir, Chardonnay and Riesling in the country. Anna Pooley, granddaughter of the founders, now leads winemaking alongside her husband Justin Bubb, carrying forward a family story built on patience, place and three generations of care.
