Pooley's Cane Cut is one of Tasmania's most elegant dessert wines and one of the most restrained. Made from grapes left on the vine to concentrate their natural sugars, it opens with gentle jasmine, honeysuckle, and citrus blossom, alongside warm caramelised apricot and lime peel. Lively lime, orange pith, and almond on the palate, with a smooth, harmonious finish. A graceful and comforting wine that's perfect with dessert or on its own. Pair with crème brûlée, fresh stone fruit, or blue cheese. Drink now through 2034.
