Wild fermented and full of character, Holm Oak's Pinot Gris is a wine that rewards those who seek it out. Lifted ripe white peach, nectarine, lemon curd, pear, and jasmine on the nose. The palate is rich with grilled nut complexity and grapefruit acidity creating length and structure, with crisp natural acidity keeping everything fresh. Drinking beautifully now, but with excellent cellaring potential. Pair with freshly caught Tasmanian crayfish, scallops, or aged soft cheese. Drink now through 2030.

Aroma

Ripe white peach, nectarine, lemon curd, pear, and jasmine with subtle creamy, leesy notes.

Palette

Sumptuous texture with grilled nut complexity, balanced by refreshing grapefruit acidity. Crisp and vibrant with excellent length and balance.

Pairings

Built for Tasmanian seafood — crayfish and scallops are the classic match. The texture and weight also suit richer dishes like roast pork or duck.

Wine Making

2024 was a warm and dry season, allowing us to pick pristine, high quality Pinot Gris fruit. Approximately 10% of the wine was wild fermented in older oak barrels and 10% wild fermented in tank; this adds complexity and texture to the wine. The remaining juice was fermented using a range of fermentation techniques and yeast strains to enhance the aromatic characters of the wine.

Meet the owners

Holm Oak sits on land with a genuinely unusual history, first planted to Pinot Noir and Cabernet Sauvignon in 1983 by Justice Edward Butler on a Tamar Valley property once owned by an architect with a passion for native timber. Winemaker Bec Duffy and her husband Tim, a viticulturist, bought the property from Bec's parents in 2013 and have run it ever since with a hands-on, honest approach that mirrors their own personalities. Known for pushing the boundaries of Pinot Noir in particular, Holm Oak has held a James Halliday Five Star rating and remains one of the Tamar Valley's most genuine family stories.

Tamar Valley

About the region

The Tamar Valley is Tasmania's oldest wine region, stretching from Launceston to the Bass Strait in the state's north. Its cool maritime climate and iron-rich soils create ideal growing conditions, and the numbers speak for themselves, home to over 30 family-owned wineries, the Tamar Valley accounts for more than a third of Tasmania's total wine production. Viticulture here goes back a long way too, with the first commercial vineyard established in the mid-1800s at Windermere, its cuttings even helping establish some of South Australia's earliest vineyards. Today, the Tamar Valley is celebrated for its Pinot Noir, Chardonnay, Riesling and sparkling wines, each one reflecting the region's exceptional terroir and winemaking heritage.
