Tasting Notes

A tiny parcel from our Waverley Vineyard east of Launceston, and always the first pick of harvest, early to capture that bright, refreshing acidity. Whole-bunch pressed straight to barrique, wild fermented, then moved to tank post-ferment and left on lees for four months before bottling. The result is sunny yet crisp, aromatic yet taut—a lively expression of site and season.

Winemaking

As always, a tiny little parcel from our Waverley Vineyard, just east of Launceston.

We love making this wine, it signals the start of harvest each year, just enough fruit to check everything is working ok in the winery before we get serious.

We try to pick this before it gets ripe really, theres always plenty of flavour, and I want the acidity to keep the wine vibrant. Whole bunch pressed straight to barriques, wild ferment, topped and left on lees for 5 months before being racked to tank and bottled soon after.

Tamar Valley

The Tamar Valley is Tasmania’s oldest wine region, located in Northern Tasmania and stretching from Launceston to the Bass Strait.

This region is renowned for its cool maritime climate and iron-rich soils, which provide ideal growing conditions for producing premium wines.

Home to over 30 family-owned wineries, the Tamar Valley accounts for more than a third of Tasmania’s total wine production. The region has a long history of viticulture, with its first commercial vineyard established in the mid-1800s at Windermere, and its cuttings even contributing to the early vineyards in South Australia.

Today, the Tamar Valley is celebrated for its Pinot Noir, Chardonnay, Riesling, and sparkling wines, all of which reflect the region’s exceptional terroir and winemaking heritage.
