The Evenfall Cabernet Sauvignon 2022 is a striking wine, displaying a deep crimson hue in the glass. The bouquet unfolds with complex aromas of blackberry, black cherry, and blackcurrant pastille, interwoven with hints of liquorice, cedar, tobacco, and clove. Subtle layers of ginger, black olive, dried herbs, tea leaves, and blackcurrant leaf add depth, while earthy undertones enhance the wine’s complexity.

On the palate, this Cabernet Sauvignon delivers a well-balanced composition with fine gravelly tannins and a lingering finish of cassis and kirsch, slowly fading to leave a lasting impression.

Winemaking

The Evenfall Cabernet Sauvignon 2022 is crafted from carefully selected fruit grown in Tasmania’s cool-climate vineyards, allowing for a long, slow ripening period that enhances the wine’s natural acidity and aromatic complexity.

After hand-harvesting, the grapes undergo cold maceration to extract vibrant colour and delicate flavours. The wine is then fermented in stainless steel to retain its fruit purity, followed by maturation in French oak barrels for added complexity and subtle oak influence.

The fine gravelly tannins are a result of careful oak aging, contributing to the wine’s refined texture and structure. This Cabernet Sauvignon showcases the balance between fruit intensity and savoury complexity, making it an excellent candidate for cellaring.

About the Vineyard

Nestled on the edge of the Tamar Valley in Tasmania, Evenfall Vineyard is a favourite among the region’s wineries. Our vineyard is meticulously planted with Pinot, Chardonnay, and some of the oldest Cabernet vines in Tasmania, reflecting our heritage as one of Tasmania’s founding sites.

Our eastern-facing slopes benefit from the Tamar River’s moderating influence, which regulates temperature and provides humidity that helps to shield our grapes from harsh UV rays. This natural protection ensures the optimal growth of our vines, contributing to the uniqueness of our wines.

A small creek runs along the southern side of our vineyard, connecting to the Tamar River. This creates a natural breeze way that flows through our vineyard, cooling the grapes as it passes through the leaves, enhancing their quality and flavour.

Evenfall Vineyard thrives, reaching its full potential year after year. Overseen with dedication and expertise, our vineyard continues to produce exceptional wines, reflecting the true character of our unique location.

Our 2022 vintage received much acclaim. Our Pinot Noir in particular receiving 95/100 in industry reviews. We anticipate a similar reception with the release of our 2023 vintage.
