A review of the 2024 noted maraschino cherry, pomegranate and rosehip tea, with minty freshness and an almond-like nuttiness. Expect similar red fruit plus a floral lift.

Palette

Dry, crisp and racy, with juicy red fruit, soft texture and lively acidity. It finishes clean with a slightly savoury, gently funky edge

Pairings

Its lightness and acidity suit sashimi, prawns, oysters, salads, charcuterie and soft goat's cheese, and it's a good aperitif or poolside wine. It also works with light Asian dishes and grilled chicken. Avoid heavy, rich or very spicy dishes, which would overwhelm it

Meet the owners

Dr Edge is the deeply personal project of Peter Dredge, one of Tasmania's most respected and inventive winemakers. After a serious head injury derailed a football career in his teens, Peter found his way into wine, working at Petaluma before five years as senior winemaker at Bay of Fires. He launched Dr Edge in 2015, sourcing fruit from single sites across the Tamar Valley, East Coast and Derwent Valley to explore how site and clone shape flavour. Playful, thoughtful and built on genuine experimentation, Dr Edge was ranked 36th in James Halliday's Top 100 Wineries of Australia in 2024.
