It spent two years on lees before disgorgement in October 2025, giving a dry, vibrant rosé with wild strawberry and red cherry fruit, fine bubbles, and a creamy, savoury finish. Drink it now or cellar it for up to five years.

Aroma

Fresh and fruit-driven. Expect wild strawberry, raspberry and red cherry, with a touch of red apple and citrus zest. Two years on lees should add subtle brioche, biscuit and a hint of spice, and possibly a faint floral or rose-petal note

Palette

Dry and lively, with crisp, fine acidity and a fine, persistent mousse. Red berry fruit leads, followed by a creamy, textural mid-palate from the lees and a savoury, slightly saline edge. It finishes clean and refreshing, with citrus and a gentle bready note lingering.

Pairings

Its red-berry fruit and dryness suit salmon or tuna sashimi, prawns, and seared scallops, and it also works with charcuterie, roast chicken, duck breast or salty fried foods like tempura. Soft cheeses such as brie or a mild goat's cheese are a good match, and it holds up to light Asian flavours. Avoid very sweet or very spicy dishes

Meet the owners

Dr Edge is the deeply personal project of Peter Dredge, one of Tasmania's most respected and inventive winemakers. After a serious head injury derailed a football career in his teens, Peter found his way into wine, working at Petaluma before five years as senior winemaker at Bay of Fires. He launched Dr Edge in 2015, sourcing fruit from single sites across the Tamar Valley, East Coast and Derwent Valley to explore how site and clone shape flavour. Playful, thoughtful and built on genuine experimentation, Dr Edge was ranked 36th in James Halliday's Top 100 Wineries of Australia in 2024.

About the region

The Tamar Valley is Tasmania's oldest wine region, stretching from Launceston to the Bass Strait in the state's north. Its cool maritime climate and iron-rich soils create ideal growing conditions, and the numbers speak for themselves, home to over 30 family-owned wineries, the Tamar Valley accounts for more than a third of Tasmania's total wine production. Viticulture here goes back a long way too, with the first commercial vineyard established in the mid-1800s at Windermere, its cuttings even helping establish some of South Australia's earliest vineyards. Today, the Tamar Valley is celebrated for its Pinot Noir, Chardonnay, Riesling and sparkling wines, each one reflecting the region's exceptional terroir and winemaking heritage.
