Delamere

The Delamere 2023 Estate Pinot Noir offers lifted red fruit aromas of blueberry, dark cherry, and wild strawberry, with complex notes of rose petal, Asian spice, and forest floor.

It presents a youthful but textured palate with fine, sandy tannins and bright acidity, showcasing flavors of redcurrant, rhubarb, and a light saline finish, all balanced by subtle oak and a strong sense of place from the Pipers Brook region

This wine pairs beautifully with duck breast, its richness balanced by the wine's zesty acidity, squab or other game birds, which echo its savoury spice and earthy character. Roast lamb with rosemary and thyme, where the tannins and acid cut through the fat. Aged hard cheeses like Comté or Gruyère, complementing the delicate oak and savoury notes and charcuterie with earthy elements such as terrines, which mirror the forest floor complexity in the glass.

The Pinot Noir was hand harvested from blocks on the Delamere vineyard aged from 23 and 42 years old. In 2023, we included roughly 30% whole bunches in all of the Delamere Pinot ferments. The fruit is fermented in open-top fermenters using hand plunging to extract colour and create the harmonious tannin structure. Each parcel commenced fermentation naturally, and was completed with a cultured yeast. The wine was pressed off after two to three weeks and filled to Burgundian coopered oak (30% new) to mature for 9 months before bottling.
