Aroma

Bear and Bird Pinot Noir offers aromas of red cherry, raspberry, violets, subtle spice, and earthy savoury notes with a refined cool-climate character.

Palette

Silky and elegant, this wine pays homage to the rich character shaped by the region’s wild weather and diverse soils. It opens with smooth fruit flavours, however bold enough to call the Coal Valley home. Think fruit flavours of cherry, raspberry and wild strawberry. Complimented by savoury spice and earthy tones to create complexity and balance the wine. Smooth and juicy on the palate, it features lovely supple tannins and an elegant, graceful finish.

Pairings

Bear and Bird Pinot Noir pairs beautifully with duck, roast chicken, pork, mushroom dishes, and soft cheeses, with its vibrant red fruit, gentle tannins, and savoury complexity complementing both rich and delicate flavours.

Wine Making

We hand‑pick our fruit, bringing it to the winery just ten minutes from the vineyard. Once it arrives, the fruit is hand‑sorted to remove underripe berries and leaves, then destemmed to ensure a clean, precise ferment.
A short cold soak follows, several days at low temperature—to gently draw out colour, aroma, and early flavour before fermentation begins.
Fermentation takes place in small open fermenters. We rely on indigenous yeasts to express the character of our site, and we use gentle cap management—plunging rather than pumping over—to keep tannins fine and avoid over‑extraction.
Once dry, the wine is pressed off skins and transferred to French oak. It matures for around nine months, building texture and complexity without overwhelming the fruit.
Each barrel is tasted and assessed before blending to achieve balance and purity. The final wine is bottled with minimal fining or filtration to preserve delicacy and a true sense of place.

Bear & Bird is a small, family-run vineyard in Campania, in the Coal River Valley, named for the couple's own children. It's a genuinely single-site operation, sustainably grown and family-owned, with wines sold directly rather than through a cellar door. The Pinot Noir leans into the region's cherry, raspberry and wild strawberry character, while the Riesling brings zesty citrus and a fine mineral edge, both made with the kind of care that comes from farming a small patch of land you call home.

About the region

Tucked into the valleys surrounding the historic town of Richmond, the Coal River Valley is Tasmania's sunniest wine region. Low rainfall, abundant sunshine and cooling breezes off the Tasman Sea come together to create conditions that are about as close to perfect as it gets for grape growing. It shows in the wines: Chardonnay with real texture and depth, Pinot Noir with elegance and structure, Riesling with precision, and sparkling wines that hold their own against the best in the world.
