Tasting Notes

Silky and elegant, this wine pays homage to the rich character shaped by the region’s wild weather and diverse soils. It opens with smooth fruit flavours, however bold enough to call the Coal Valley home. Think fruit flavours of cherry, raspberry and wild strawberry. Complimented by savoury spice and earthy tones to create complexity and balance the wine. Smooth and juicy on the palate, it features lovely supple tannins and an elegant, graceful finish.

Winemaking

We hand‑pick our fruit, bringing it to the winery just ten minutes from the vineyard. Once it arrives, the fruit is hand‑sorted to remove underripe berries and leaves, then destemmed to ensure a clean, precise ferment.
A short cold soak follows, several days at low temperature—to gently draw out colour, aroma, and early flavour before fermentation begins.
Fermentation takes place in small open fermenters. We rely on indigenous yeasts to express the character of our site, and we use gentle cap management—plunging rather than pumping over—to keep tannins fine and avoid over‑extraction.
Once dry, the wine is pressed off skins and transferred to French oak. It matures for around nine months, building texture and complexity without overwhelming the fruit.
Each barrel is tasted and assessed before blending to achieve balance and purity. The final wine is bottled with minimal fining or filtration to preserve delicacy and a true sense of place.

About the Vineyard

Nestled in the ancient riverland soils of the Coal Valley, Bear and Bird Wines is more than a vineyard, it is our family's home. We produce only a few thousand bottles each year, ensuring that every drop reflects the unique
character of our soil and season. Sustainably Grown: We are proud partners of the Tasmania Brand and Sustainable Wine Growers Australia. Our viticulture is quided by a commitment to the land we live on. We follow certified best practice standards to care for our vineyard. But more importantly, we work
to preserve the land for future generations to come, weather its ours or yours. Small Batch : Our vines thrive in the rich, historic soils of the Coal Valley, resulting in wines with distinct depth and elegance. Because we
focus on quality over quantity, our small-batch releases are limited. Each bottle is a snapshot of a season, a soil, and a moment in time.

Single Site: When you open this wine you know that 100% of the wine you are enjoying is grown on our vineyard. Tasmanian made: Grown and made in the Coal Valley, named after our seventh generation Tasmanian children-our very own "Bear and Bird" our vineyard is managed with the future in mind. We treat our soil with care today so they can enjoy it tomorrow.
