Yield: 12 tonnes per hectare (4.8 tonnes per acre)

Pressed and settled in tank, racked clear juice and stored in tanks at zero degrees. Then the juice is hard frozen to separate juice and ice. The juice is concentrated to 17.5 Baume, then fermented in tank. The fermentation is stopped when the sugar level is around 200 to 220 gr/L.

Meet the owners

Frogmore Creek began life as Meadowbank Estate in 2000, before a rebrand in 2012 turned it into one of the largest and most awarded cool climate wineries in Southern Tasmania. Based in the Coal River Valley just outside Hobart, the winery draws on two estate vineyards and a long-serving winemaking team, including chief winemaker Alain Rousseau, who has been with the brand for two decades. Frogmore Creek produces wine under its own label as well as the Forty-Two Degrees South range, with a "let the fruit do the talking" approach that keeps the focus on Tasmania's cool climate character.
