Wine Making

This wine is made from 100% Pinot Noir. The fruit for the wine is hand-picked and then whole bunch pressed to minimise phenolic extraction. Following primary fermentation 20% of the wine was transferred to older oak for maturation, with the remaining 80% matured in tank. All wine underwent malolactic fermentation. The wine was then tiraged and remained on lees in bottle for 12 months prior to disgorging. A small amount of Pinot Noir was added during disgorging to enhance the Rosé colour.

Meet the owners

Holm Oak sits on land with a genuinely unusual history, first planted to Pinot Noir and Cabernet Sauvignon in 1983 by Justice Edward Butler on a Tamar Valley property once owned by an architect with a passion for native timber. Winemaker Bec Duffy and her husband Tim, a viticulturist, bought the property from Bec's parents in 2013 and have run it ever since with a hands-on, honest approach that mirrors their own personalities. Known for pushing the boundaries of Pinot Noir in particular, Holm Oak has held a James Halliday Five Star rating and remains one of the Tamar Valley's most genuine family stories.

About the region

The Tamar Valley is Tasmania's oldest wine region, stretching from Launceston to the Bass Strait in the state's north. Its cool maritime climate and iron-rich soils create ideal growing conditions, and the numbers speak for themselves, home to over 30 family-owned wineries, the Tamar Valley accounts for more than a third of Tasmania's total wine production. Viticulture here goes back a long way too, with the first commercial vineyard established in the mid-1800s at Windermere, its cuttings even helping establish some of South Australia's earliest vineyards. Today, the Tamar Valley is celebrated for its Pinot Noir, Chardonnay, Riesling and sparkling wines, each one reflecting the region's exceptional terroir and winemaking heritage.
