Crafted from three separate blocks and given extended time on lees, Holm Oak's Chardonnay is a wine of real depth and refinement. Citrus, apricot kernel, and white peach on the nose, harmoniously integrated with spicy oak. The palate is rich and textural from malolactic fermentation, finishing with a clean, fine minerally acidity and a subtle oyster shell savouriness that adds genuine complexity. Pair with fresh crayfish, scallops, or roast chicken. Drink now through 2031.

Aroma
Citrus fruit, apricot kernel, white peach, with spicy integrated oak.
Palette
Textural richness from malolactic fermentation, balanced by a fine, minerally finish with subtle savouriness. Crisp, minerally acidity with delicate oyster shell complexity.
Pairings
The richness and acidity make it a strong match for Tasmanian pork (the acid cuts nicely through crackling), roast chicken, or fresh crayfish and scallops.
Wine Making
The fruit for this wine was picked when the flavour profile was in the citrus/nectarine spectrum. Three clones of Chardonnay from two separate blocks were used to make this wine. The fruit was gently pressed to tank and allowed to settle for 24 hours prior to being packed to the barrel (30% new French oak and 70% 1-4 year old). The wine underwent 100% natural fermentation and 50% malolactic fermentation. The wine was then matured in oak for months with occasional lees stirring to enhance texture and mouthfeel.
Meet the owners
Holm Oak sits on land with a genuinely unusual history, first planted to Pinot Noir and Cabernet Sauvignon in 1983 by Justice Edward Butler on a Tamar Valley property once owned by an architect with a passion for native timber. Winemaker Bec Duffy and her husband Tim, a viticulturist, bought the property from Bec's parents in 2013 and have run it ever since with a hands-on, honest approach that mirrors their own personalities. Known for pushing the boundaries of Pinot Noir in particular, Holm Oak has held a James Halliday Five Star rating and remains one of the Tamar Valley's most genuine family stories.

About the region
The Tamar Valley is Tasmania's oldest wine region, stretching from Launceston to the Bass Strait in the state's north. Its cool maritime climate and iron-rich soils create ideal growing conditions, and the numbers speak for themselves, home to over 30 family-owned wineries, the Tamar Valley accounts for more than a third of Tasmania's total wine production. Viticulture here goes back a long way too, with the first commercial vineyard established in the mid-1800s at Windermere, its cuttings even helping establish some of South Australia's earliest vineyards. Today, the Tamar Valley is celebrated for its Pinot Noir, Chardonnay, Riesling and sparkling wines, each one reflecting the region's exceptional terroir and winemaking heritage.
