Aroma
The nose features rich characters of charred lemon, salted caramel, honeycomb and roasted hazelnut meal. There is a fine bead and delectable mousse.
Palette
The palate shows tertiary notes of roasted pecan, butterscotch, crème d’amande and freshly baked croissant. The palate is rounded out by the brandy liqueur added at disgorgment,
and the finish is long and complex. Drinking beautifully now or you can mature this wine as it will benefit from further bottle ageing.
Pairings
Pairs beautifully with oysters, lobster, scallops, smoked salmon, aged cheeses, and fine charcuterie, with its creamy texture, fresh acidity, and brioche complexity enhancing both delicate and richer flavours.
Wine Making
Made in a brut style, the dosage is low with approximately 3.5 grams per litre but with an added 1 gram per litre of house made and grown brandy liqueur. This brandy liqueur is made from wine which was distilled onsite. The brandy had been matured in a single French oak barrel tucked away in the bond for 11 years before added to the liqueur.
Meet the owners
Stefano Lubiana is one of the most significant names in Tasmanian wine. Fifth-generation winemaker Steve Lubiana and his wife Monique planted their Granton vineyard on the Derwent River in 1990, drawn by Tasmania's potential for serious sparkling wine. In 2013 the property became Tasmania's first certified biodynamic vineyard, and it remains one of very few in the state today. Now with son Marco carrying the family tradition into a sixth generation, Stefano Lubiana produces Pinot Noir, Chardonnay and traditional method sparkling of real depth, wines that have picked up Best Biodynamic Wine in the World honours on multiple occasions.
