This is a wine for those who understand what time does to great sparkling. Stefano Lubiana's Late Disgorged Brut 2013 has spent years developing extraordinary complexity. Charred lemon, salted caramel, honeycomb, and roasted hazelnut on the nose, with a fine bead creating an elegant mousse. The palate unfolds with tertiary notes of roasted pecan, butterscotch, crème d'amande, and freshly baked croissant, rounded by brandy liqueur added at disgorgement.
