Stefano Lubiana's Late Disgorged Brut 2019 is a sophisticated sparkling wine that captivates from first sip. The nose reveals charred lemon, salted caramel, honeycomb and roasted hazelnut meal, while a fine bead creates an elegant mousse. On the palate, tertiary notes of roasted pecan, butterscotch, crème d'amande and freshly baked croissant unfold beautifully, rounded by brandy liqueur added at disgorgement. The result is a long, complex finish that rewards immediate enjoyment or patient cellaring. This wine will develop gracefully with further bottle age, making it an exceptional choice for both celebration and investment.

Tasting Notes

The nose features rich characters of charred lemon, salted caramel, honeycomb and roasted hazelnut meal. There is a fine bead and delectable mousse. The palate shows tertiary notes of roasted pecan, butterscotch, crème d’amande and freshly baked croissant. The palate is rounded out by the brandy liqueur added at disgorgment,
and the finish is long and complex. Drinking beautifully now or you can mature this wine as it will benefit from further bottle ageing.

Winemaking

Made in a brut style, the dosage is low with approximately 3.5 grams per litre but with an added 1 gram per litre of house made and grown brandy liqueur. This brandy liqueur is made from wine which was distilled onsite. The brandy had been matured in a single French oak barrel tucked away in the bond for 11 years before added to the liqueur.

About the Vineyard

We were Tasmania’s first certified biodynamic vineyard, and have been cultivating
our vines using biodynamic methods since 2010. This means that our wines are free of all
synthetic treatments, additives and pesticides. Instead we travel the alternative path, stepping
back in time and using cosmic rhythms to ensure soil regenereation as well as effective vine
care through all phases of the year’s seasonal cycles.

These methods enhance our attention to detail in the vineyard and winery, as we are more
alert to the signals of Mother Nature and her messengers. Every season, we're becoming
more attuned to the synergies between our varied soil types, their organisms, the local
flora and fauna, and of course our vines.

While we have a strong focus on Sparkling wines as well as Pinot Noir and Chardonnay, we
love experimenting and exploring. Don't be surprised if you visit our Cellar Door to find a
Malvasia or perhaps a nip of Grappa tucked away behind the tasting bench.

Derwent Valley

The Derwent Valley wine region, located to the north-west of Hobart, stretches from the lower reaches of the River Derwent at Granton to the scenic hills and valleys around Meadowbank.

The region's vineyards are perched on north-facing hillsides, which provide ideal sun exposure for grape growing. Known for its cool climate, the area primarily produces Pinot Noir, Chardonnay, and Riesling, echoing Tasmania’s wider wine production focus.

Although once regarded as a marginal area for viticulture due to its cooler climate, the upper reaches of the Derwent Valley have recently gained recognition for producing stunning examples of cool-climate wines, reflecting the unique terroir of the region.
