Aroma

An expressive, full-spectrum Sauvignon Blanc nose spanning tropical, mineral, and herbaceous territory — yellow grapefruit and passionfruit sit alongside wet river stone and a distinctive jalapeño edge.

Palette

The skin contact translates to real palate weight and texture, not just a thin, zippy style. Tropical fruit and herbaceous notes carry through, with the mineral, stony character giving it structure and length.

Pairings

The tropical-meets-herbaceous profile suits fresh goat's cheese, ceviche, or dishes with a bit of chilli heat — the jalapeño note on the nose makes it a fun match for something spicy. Also excellent with fresh oysters.

Wine Making

Sauvignon Blanc requires generous skin contact to build texture and palate weight.

Vital flavour compounds are located in layers immediately below the skins, requiring liberation prior to pressing.

Following harvest, juice was pressed into stainless steel tank (85%) for an inoculated fermentation with thiol-enhancing yeast, and into new French oak barriques (15%) for natural fermentation and aging. Both tank and barrel parcels received regular lees stirring and extended time of lees prior to bottling in mid August. The wine was crossed-flow filtered prior to bottling.

Meet the owners

Ghost Rock's story started small, a modest vineyard planted in the corner of Cate and Colin Arnold's potato farm at Northdown in 1999. Over the following two decades, the family all but built Tasmania's Cradle Coast wine region from scratch, planting patch by patch with no formal training, just persistence and a feel for the land. Today son Justin and his wife Alicia run the show, with Justin's winemaking experience spanning the Yarra Valley, Margaret River and California's Napa Valley. The wines, mostly Pinot Noir and Chardonnay, are grown, made and bottled entirely on site.
