Wine Making

Handpicked, whole bunch pressed with 100% MLF, the NV Cuvée is made by the traditional method of bottle fermentation. Blending, a key aspect of this wine, is always focused on retaining the fresh fruit characteristics whilst balancing the more complex flavours that come with wine maturation in barrel and on yeast lees.

The varietal blend is 55% Chardonnay and 45% Pinot Noir, with 22% reserve wine blended into the 2022 base. The reserve blend consists of 4% 2021, 12% 2020, 4% 2018, and 2% 2017.

Tirage Date: December 2022, Disgorgment date 12/6/2024 (18 months tirage age).

Meet the owners

Delamere is one of the true pioneers of Pipers Brook, planted back in 1982 and among the oldest vineyards in the region. Husband and wife team Shane Holloway and Fran Austin took over the property in 2007, bringing serious sparkling wine credentials with them, Fran had worked alongside Ed Carr on the famed Arras label and later as head winemaker at Bay of Fires. Grown exclusively to Pinot Noir and Chardonnay on rich ironstone soil, Delamere is a genuine grower producer, 100% family owned, grown, made and bottled on site.

Established in 1974 by Dr Andrew Pirie, Pipers River and Pipers Brook is the region that put Tasmanian sparkling wine on the map. A climate that mirrors Champagne, hilly terrain, and some of Tasmania's most prestigious producers come together here to create sparkling wines of extraordinary finesse. Pinot Noir and Chardonnay are just as at home, producing wines of real depth, complexity and cool climate elegance.
