Aroma
Aromas of dark cherry, wild strawberry, blackberry, violet, forest floor, spice, and subtle savoury complexity with an elegant mineral lift.
Palette
Dark cherry, wild strawberry and raspberry fruit tones with a captivating blood orange tone. Hints of souk-like spice, char siu, dark cherry conserve, negroni, light, toasty oak, dried shiitake, pomegranate, dried game meats, wildflowers and earth. I love the clarity and tension in this wine; the interplay between pure fruit, tannin and acidity captures and holds attention as the wine travels stony and composed across the palate.
Pairings
Pair with duck, venison, roast lamb, game birds, mushroom dishes, and aged cheeses, with its concentrated red and dark fruit, fine tannins, earthy notes, and elegant structure complementing rich and refined flavours.
Wine Making
Stylistically we are looking to make a focused yet elegant wine of purity and balance that is true to the site, with the fruit spectrum right on the cusp of red and black (perhaps leaning to the red). Thus, still holding its natural acidity, vibrancy and line. Stalks are a component; though well embedded into the wine. Our crops are low (~1 kg/vine) so we are reaching this flavour profile at modest sugar levels Made in the vineyard from careful selection of 3-4 of the 8 clones planted, depending on the season.
Meet the owners
Chatto is the very personal project of Jim Chatto, one of Australia's most respected winemakers, made in the Huon Valley alongside his day job as a senior winemaker on the mainland. Jim fell for Tasmanian Pinot Noir while working at Rosevears Estate in the late 1990s, and spent six years searching for the perfect site before planting the Isle Vineyard at Glaziers Bay in 2007, one of the most southerly vineyards in the country. Now producing up to ten expressions of Pinot Noir sourced from across the island, Chatto is proof of just how far a single-minded obsession with one variety can go.

Deep in Tasmania's south, the Huon Valley is one of the island's most dramatic wine regions, steep hillsides, ancient apple orchards, and a cool, wet climate that really pushes grapes to their limits. That challenge is exactly what gives the wines their intensity and character. Pinot Noir thrives here, producing wines with dark fruit, earthy complexity and a structure built for the cellar. A region for anyone after something genuinely different.
