The Holm Oak NV Sparkling is an elegant blend of estate-grown Pinot Noir and Chardonnay grapes, crafted from Tasmania’s premium cool-climate vineyards.

On the nose, this sparkling wine offers aromas of red apple and citrus, with hints of honey and buttered toast adding a layer of complexity. The palate is dry and refreshing, delivering great intensity with a fine bead that enhances its crisp texture.

Tasting Notes

Aroma: Lifted notes of red apple, citrus, strawberry, and Turkish delight, with hints of honey and buttered toast.

Palate: Dry and refreshing with vibrant intensity, showcasing citrus and red fruit flavours, complemented by a fine bead and a velvety texture.

Finish: Crisp and clean, with lingering fruit and mineral notes.

Winemaking

We hand harvest the Pinot Noir (50%) and Chardonnay (50%) when optimal acidity and flavour is reached. The fruit is then whole bunch pressed and fermented with a neutral yeast. A portion of the wine is transferred to barrel prior to the completion of primary fermentation. It underwent malolactic fermentation to soften the acidity and increase complexity. The wine was then tiraged to undergo traditional bottle fermentation, before spending time on lees for a period of 24 months prior to disgorging.

About the Vineyard

Holm Oak is a labour of love for winemaker Bec Duffy and her husband Tim Duffy, viticulturalist. Since 2006 they have followed their dream of crafting delicious expressions of cool-climate Tasmanian wines.

One of Bec and Tim’s shared passions is to create things. They simply love to craft treasures from Mother Nature’s wonderland. They are creative winemakers, pushing boundaries and trying new techniques, but always remaining true to Tasmania’s highly regarded winemaking reputation.

Their complementary skills drive their vision to produce delicious wines that reflect their home, Tasmania’s pristine Tamar Valley, and their own personalities – honest, down to earth, genuine and authentic.
