Winemaking

59% Chardonnay, 35% Pinot Noir, 6% Pinot Meunier.

Historically Clover Hill has followed a traditional pathway of vintage and non-vintage Methode Traditionnelle sparkling wines. But are forging a new path. We believe the most critical elements of sparkling wine are distinctive styles, consistently produced which enables consumers to develop a deep understanding and trust in our brand.

Multi-Vintage is a story of complexity in our base wines. Across vintages we use four different techniques to hold reserve wines, giving our winemakers more creative freedom, resulting in more expressive wines. Our reserve wine approach preserves freshness and character and provides our winemaking team with the ultimate conditions to deliver our house style.

About the Vineyard

Nestled on the outskirts of Lebrina, north-eastern Tasmania, Clover Hill has a reputation for crafting wines of exceptional pedigree due to our ideal environmental conditions.

VINEYARD SITE
The ideal environmental conditions of Clover Hill’s Pipers River site include a cool, frost-free maritime climate, ancient volcanic soils and a sheltered, naturally sloping amphitheatre. The vines are spaced 1.1m apart, with 1.9m between rows. They are oriented to the north to maximise sunlight interception. Significant effort is poured into our canopy management to create the best micro-climate for optimal fruit parcel development. Vines are cane pruned to minimise the impact of low-bud fertility.

VARIETIES
Clover Hill is planted solely with the traditional sparkling wine varieties of Chardonnay (13 hectares/32 acres), Pinot Noir (7 hectares/22 acres) and Pinot Meunier (1.24 hectares/3 acres).

FRUIT – Clover Hill is planted solely to the traditional sparkling wine varieties of Chardonnay, Pinot Noir and Pinot Meunier. These varieties are all trellised in traditional close proximity plantings.

CLIMATE – A cool climate region with high seasonal rainfall and moderate maritime winds.

SOIL – Red rocky volcanic soil (averaging 1-5m deep) is scattered with basalt stone. The soil is free draining with high organic matter and nutrient holding capacity. Varieties are planted in blocks along contours of soil depth and composition.

GEOGRAPHY – The site capitalises on three natural assets – a constant maritime climate, rich volcanic soils and a sheltered amphitheatre.
